- The preparation of orecchiette and turnip greens begins by putting the water to boil on the fire in a large pot. Meanwhile, take a large enough pan and pour 2-3 tablespoons of chilli extra virgin olive oil, heat it over high heat until it is hot. Then pour the garlic into wedges and once golden, we will put 3 or 4 anchovies and with a spoon we turn so as not to burn. After a couple of minutes add the pesto to turnip greens and once the orecchiette are cooked (12-15min), drain well and pour into the pan of anchovies and turnip greens. Mix with a spoon and prepare the dishes for 5 people.
