Description:

The OSTIE RIPIENE here are with toasted almonds and caramelized with honey: they are a typical dessert of the Municipality of Monte Sant'Angelo (FG), on the Gargano.

Stuffed hosts of Monte Sant 'Angelo, known in the Apulian dialect as "ostia chjène", are composed of two oval wafers of ostia stuffed with a filling of toasted almonds, caramelized with sugar and honey.

Details and history:

The Apulian tradition narrates that this typical sweet was born by chance, in the 1600s, during the preparation of the sacred hosts, right in the convent of the Clarisse nuns of Monte Sant'Angelo, inside a famous monastery dedicated to the Archangel Michael. This origin is also confirmed by the shape of these delights, in fact they are wrapped in an envelope prepared with the same ingredients and the same cooking of the hosts for communion. It is said that while some nuns were preparing the dough for the communion wafers, some sweet toasted almonds slipped into a bowl of warm honey. In order to pull them up, two pieces of host were used. The toasted almonds now also covered with honey, immediately joined the host, forming a single compound: hence the name "stuffed ostie".
