Description:

The orecchiette, known in the Apulian dialect with the name of recchietelle, represent the typical format of homemade pasta, a gastronomic symbol of Puglia. The handmade orecchiette pugliesi are packaged and sold in a 500g fresh savory bag, with a controlled atmosphere to preserve the flavor of traditional fresh pasta.

Durum wheat semolina, water, tomatoes and spinach.

Details:

The Apulian orecchiette are round and concave, with the center thinner of the edge and with the rough surface. This particular shape makes them ideal to be combined with any type of condiment, although the Apulian tradition has always married them with turnip tops.

CHEF RECIPE:
Orecchiette with turnip tops
Step 1: Wash and clean the turnips, removing the hardest leaves and coasts, keeping only the "tops". Boil salted water in a saucepan and cook the orecchiette for about 10 minutes. Add the turnip tops and cook for 4-5 minutes.
Step 2: In a pan with some extra virgin olive oil, sauté 1 clove of garlic, a small crushed pepper and two anchovies on a low heat.
Step 3: When the anchovies are completely melted, drain the pasta and turnip greens and pour them into the pan.
