The orecchiette, known in the Apulian dialect with the name of recchietelle, represent the typical format of homemade pasta, a gastronomic symbol of Puglia. The handmade orecchiette pugliesi are packaged and sold in a 500g fresh savory bag, with a controlled atmosphere to preserve the flavor of traditional fresh pasta.

Durum wheat semolina, water, orange flavor.

Details:

The Apulian orecchiette are round and concave, with the center thinner of the edge and with the rough surface. This particular shape makes them ideal to be combined with any type of condiment, although the Apulian tradition has always married them with turnip tops.

CHEF RECIPE:

Orange orecchiette with datterini, courgettes and shrimps

Step 1: Cut the tomatoes into slices and place them in a bowl with 2 tablespoons of olive oil and chopped basil.
Step 2: Clean the prawns and sauté in a non-stick pan for 2 minutes with chopped chilli and slightly salting.
Step 3: Cut the courgettes into strips and sauté with 2 tablespoons of oil for 3 ', adding salt and pepper.
Step 4: Cook the Apulian Cavatelli in plenty of salted water, drain when al dente and season with the prawns and courgettes.
Step 5: Garnish with marinated tomatoes.
