Description:

The orecchiette, known in the Apulian dialect with the name of recchietelle, represent the typical format of homemade pasta, a gastronomic symbol of Puglia. The handmade orecchiette pugliesi are packaged and sold in a 500g fresh savory bag, with a controlled atmosphere to preserve the flavor of traditional fresh pasta.

Durum wheat semolina, water, primitive red wine.

Details:

The Apulian orecchiette are round and concave, with the center thinner of the edge and with the rough surface. This particular shape makes them ideal to be combined with any type of condiment, although the Apulian tradition has always married them with turnip tops.

CHEF RECIPE:
Orecchiette with spicy sausage
Step 1: In a pan put the spicy sausages with a finger of water and let cook for about seven minutes, in another pan put the oil and the clove of garlic and add the sausages that we have removed from the other pan also the laurel and let cook slowly, when they are cooked and browned, remove them and keep them aside in the pot, now we will combine the tomato sauce with the red pepper,

Step 2: Cook everything, on a moderate flame for about 15 minutes, and a few minutes before the end of cooking let's put the sausages in the pan with the sauce, making them flavor, add the salt and with this sauce we will dress our " cicatelli "served with grated caciotta and some pieces of sausage also.
