The orecchiette, known in the Apulian dialect with the name of recchietelle, represent the typical format of homemade pasta, a gastronomic symbol of Puglia. The handmade orecchiette pugliesi are packaged and sold in a 500g fresh savory bag, with a controlled atmosphere to preserve the flavor of traditional fresh pasta.

The Apulian orecchiette are round and concave, with the center thinner of the edge and with the rough surface. This particular shape makes them ideal to be combined with any type of condiment, although the Apulian tradition has always married them with cuttlefish ink ..

CHEF RECIPE:
Orecchiette with cuttlefish ink and scampi sauce
Step 1: In a large saucepan, put the oil in the garlic, pepper (or chilli if we like) and let it heat well. When it is all browned add the datterino tomato sauce and the halved cherry tomatoes, cover and cook over high heat for at least 20 minutes (if it should dry, add a little water). In the meantime I wash the prawns well, I take out the eyes (which are the bitter part) and I make a small incision on the head since it is the most tasty part (cut in half without getting to the bottom to make it split). When the tomato has cooked slightly, add the prawns, cover and cook another 10 minutes maximum.

Meanwhile cook the pasta and, before draining, remove the scampi from the sauce and keep warm in another pot. Let's savor the orecchiette in the sauce and serve with 3 scampi per dish!
