CHEF RECIPE:
Olive leaves with fresh tomatoes, Apulian burrata and chilli pepper
Step 1: First boil a pot of water and blanch the fresh tomatoes for a few minutes. Allow to cool, peel and cut into small pieces.
Brown the peeled and crushed garlic and the finely chopped hot pepper in a spoonful of extra virgin olive oil; when the garlic starts to brown, remove it and add the tomatoes. Cook over high heat for about ten minutes, until the water of vegetation has evaporated.
Step 2: Meanwhile, cook the olive leaves in plenty of salted water and cut the burrata pugliese into small pieces. Drain the olive leaves al dente and toss them for a few moments with the tomato, then turn off the heat and add the burrata. Mix well and serve the olive leaves with fresh tomato, burrata pugliese and hot hot pepper, just ready.
