FOGLIE D'ULIVO AL CACAO 500gr

Ingredients:

Durum wheat semolina, water, cocoa 2%.

CHEF RECIPE:
Olive leaves with tomato and wild boar meat
Step 1: Cut the wild boar pulp into small pieces and place in a bowl with one liter of red wine, vinegar, bunch of herbs, spices, 2 peeled garlic cloves, lemon pieces, a bay leaf and a celery coast. Brown with garlic in a saucepan with the oil and add the meat: once it is well browned, sprinkle with brandy, and a shaded face, add the chopped vegetables, laurel and wine.

Stop2: When it is boiling add the tomato sauce, salt and pepper and continue cooking for about 2 hours (adding hot water whenever necessary). When the meat is almost cooked, remove it from the casserole, chop it coarsely and put it back to cook, continuing cooking for another 30 minutes.

Stop3: Cook the pasta in plenty of salted water, drain it and dress it with the sauce, a drizzle of extra virgin olive oil and a sprinkling of chopped fresh parsley.
